It was Dave’s turn to pick the topic. He said the day before recording, “I’ve been asking God what he wants us to talk about this week and I feel like He is just wanting us to chat with no agenda.” So…. That’s what we did.
About our drink:
This Limited Edition Double Cask Wyoming whiskey is aged in a most unique maturation environment in the whiskey world. Kirby has a sub-zero cold winter and desert blistering hot summer weather to make the juice dance in and out of the oak cradle. That environment is tough on people, but it’s extreme have great potential for the whiskey aging. The Double Cask Limited Edition starts with the same wheated bourbon used in the Small Batch and Single Barrels. The mashbill is 68% Corn, 20% Wheat, 12% Malted Barley, aged for five years in new, charred white oak barrels and finished in Pedro Ximenez sherry casks before bottling at 50% ABV.
The whiskey is not chill filtered and has a dark rich mahogany color in my glass evidencing the romantic dance in a sherry cask for finishing. The nose bursts with sweet dried fruits and candied fig jelly. The Wyoming Whiskey Double Cask has a wonderful aroma which I could nose for hours.
On the palate I experience a saucy, rich and syrupy juice reminding me of butter sautéed mulberries with hints of vanilla, dried raisins and orange candy sprinkles. The finish is intensely warm and long with notes of oak, more dried fruit, fig jelly and fresh-ground cinnamon spice.This whiskey is just plain good and it’s exciting for me to see this smaller distillery growing.

We sip on a delicious bourbon, Smoking Wagon, thanks to Chase Mascaro while discussing one of the more serious topics we have ever discussed on TCMS.
About our drink:
Our high rye content bourbon is aged in the heart of a century-old brick warehouse. To ensure a unique and consistent flavor, barrels are hand selected to create a perfect blend that is smooth and at the same time bold and intense.
Released in 2016, our goal was to create a unique great tasting high rye content bourbon.
The problem is that rye ages much faster than corn.
So while our younger vintages had a big rye spice flavor (which we love) the mouth feel was too thin and it lacked the sweet, delicate complexity of a well aged spirit. Our older vintages had the smoothness and sweet notes that can only be achieved by moving in and out of #4 char and caramelized oak for many, many years, but the nice rye spice had been aged out!
So what to do? Find the perfect blend.
We combined the two. The younger vintages maintain the bold spiciness of the rye, cut down on the tannins and keep it fruit forward. The older vintage brings in a creamy mouth feel with sweet aromas and taste notes that only appear over time from aging in a barrel. We hope you enjoy drinking it as much as we enjoy making it.
Nose:
Balanced oak nose with hints of fruit and dried apricots.
Taste:
Initial sweet notes on the front of the tongue. Well balanced mouth feel with spicy notes including white pepper on the middle and back of the tongue from the younger vintage and high rye mash bill.
Good balance of sweet and oak flavors including hints of caramel (from the #4 charred barrels, caramelized wood sugar), fruit flavor and rye spice. Finishes smooth with no alcohol burn even at 100 proof.

Wyoming Whiskey they are proud of their state and their spirits. the distillery was founded in 2009 by Kate and Brad Mead and their friend David DeFazio. But they had the help of an experienced guiding hand — Steve Nally, former master distiller at Makers Mark. The first commercial Whiskey was released as a four year old in 2012, but they state that all current Whiskies are a minimum of five years old. Importantly, they state loud and clear that none of their spirits are sourced. Every drop is distilled and aged on site at their facility in the Big Horn Basin of Wyoming, all the grains are farmed within one hundred miles, and the water comes forma local well sunk into an ancient limestone aquifer. And you’ve just got to respect that.

The Council of Trent was called to counter the Protestant Reformation by unambiguously affirming the distinctive truths of the Catholic faith. To disseminate these truths, the Council of Trent commanded a Catechism to be written. The celebration of Ardbeg Day is held annually on the final Saturday of Islay’s Festival of Music and Malt and stands as a celebration of all things Ardbeg. This year the celebration is set to be entirely online due to the COVID-19 pandemic. This will be the second year the festival has been virtual.
“This year will be my first Ardbeg Day ever: a baptism of fire! The Committee Release of Ardbeg Scorch will be available to buy from Ardbeg Embassies, whisky specialists, online retailers and from the Distillery Visitor Center on May 1 for $139. The General Release will be available on June 1 at a price point of around $120. Official tasting notes can be found below.
- Color – Bright brushed gold
- Nose – On the nose, frighteningly intense aromas of soot and smoke lie in wait. Hints of aniseed and fragrant patchouli interlace with bold notes of quenched steel and saddle soap. With a drop of water, herbal top notes of briarwood, sage and pine wisp their way to the fore.
- Taste – Take a sip and experience layer upon layer of flavor. An oily mouthfeel grips the senses. Billowy clouds of sweet smoke and dragon charred oak permeate the palate, while grilled fare and black licorice weave between notes of medicinal lozenge.

Inspired to produce an even fruitier, sweeter Balvenie, Apprentice Malt Master Kelsey McKechnie had the bright idea to import Virgin Oak barrels from Kentucky. After deep toasting them at The Balvenie Cooperage they were filled with Balvenie aged in ex-bourbon barrels. The result is a delectably complex whisky with notes of candied fruit, coconut and delicate vanilla.

This 10 year old Speyside single malt is drawn from ex-bourbon and ex-sherry casks after at least a decade of slumber, resulting in a malt that shows off the distillery’s style wonderfully. Expect hearty barley backed up by orchard fruit and toasted almond, alongside just a hint of herbaceous oak.
